This is Ogana from Ogana, once again today.
Today, I want to talk about a sushi restaurant in Ginza, Tokyo.
It’s Kiyota Hanare.
It’s known as one of the higher-priced sushi restaurants in Japan.

I recently posted a short review on Threads after visiting,
and the response was better than I expected, so today I’m going to organize what I ate that day
like a record.
The reason I really wanted to introduce this place
Kiyota Hanare
It is said to be a place that the late Chairman Lee Kun-hee was fond of.
And Mr. Morita of Shilla Hotel Ariake,
who is regarded as having raised Japanese sushi culture to the next level,
was taught by Mr. Kimura from this very place.

Once you know this background,
you can roughly guess
how this restaurant is run.
Kiyota Hanare does not have a large variety of sushi,
but instead uses only the most expensive and best ingredients of the day.
A place where you can see its standards from the very first bite

Otoro, pen shell clam
The first dish that day was otoro.
Usually, meals often begin with something light, like white fish,
but this place did not hide its standards from the very first bite,
and the pen shell clam was a dish that showed its crisp texture and the strength of the ingredient itself without any fishiness.
Tuna steak, two kinds of uni
The tuna steak was also quite memorable.
It had fibers like beef,
so you could immediately tell that the ingredient itself was excellent.
Two kinds of uni were served,
and it was impressive that even though they were both uni, they tasted different.
One had a clear ocean aroma,
and the other left a much richer, lingering finish.

Then came ark shell and striped jack.
The ark shell had an impressive texture,
and the striped jack had the rich fat and balance typical of deep-sea fish from Japanese waters.
Good ingredients can even change your taste

The last item, a persimmon,
is actually not a fruit I usually enjoy.
But that day, I ended up eating it all,
because I trusted the ingredients,
and it was a very satisfying finish.
A place whose reason for being expensive is clear
Kiyota Hanare
One meal costs 1 million won.
If ten-ten is included, it feels like around 1.2 million won.
Even so, the reason I keep coming back is
that this is not a place for “expensive food,” but one that consistently shows a standard of not putting a price ceiling on ingredients.
After visiting Kiyota Hanare..
If you want to experience the standard of the best ingredients in Japan,
I can confidently recommend this place.

Being able to experience food from a chef with this kind of standard a few times a year
was, for me, more than enough to feel motivated.
